SUCCULENT SHRIMP AND RICE RECIPE




It's not that difficult to find recipes for delicious and tempting shrimp with rice. I have a few that will definitely whet your appetite.

I enjoy rice. Rice was a regular staple in our home. It was undoubtedly more to us than anything you would throw at a newlywed. How did that tradition start, however. I'll have to research that.

Rice is a very adaptable meal that is also healthy.

When I was a child, we never had French fries or mashed potatoes at our family; instead, we always had rice. My father enjoyed it. That's what my mother would prepare, then. She would cook it in various ways. These are two of the rice dishes Mom used to prepare for our family that, in my opinion, are the best.

Spaghetti sauce is called for in Recipe II. I produce my own (there is a recipe on this site for spaghetti sauce under Italian Recipes). I've never had jarred sauce, so I can't speak to its flavor. However, you can use a favorite jarred sauce or prepare your own for convenience's sake in this recipe.

Ingredients



  • 2 tbl olive oil
  • 1/2 tsp garlic clove smashed left whole
  • 1/2 tsp dried oregano leaves
  • 1/2 cup grated parmesan cheese
  • 2 tbls chopped chives or green onions
  • 1 1/2 cups uncooked long grain white rice
  • 2 tbls butter or margarine
  • 2 tbls chopped onion
  • 3 cups chicken broth
  • 1/2 lb bay shrimp (the tiny shrimp whic usually come already cooked)
  • 1 tbl red wine vinegar

Instructions

  • In a bowl, mix together the vinegar, olive oil, garlic, and oregano. Include the shrimp. While you make the rice, cover and place in the refrigerator to marinate.

  • Butter should be melted in a medium skillet or sauce pan with a tight-fitting cover. Combine rice and onions. For around five minutes, saute. Including chicken broth up to a boil. Cook for 20 minutes, with the lid on, at a simmer, or until the liquid has been absorbed and the rice is soft.

  • As soon as the rice has through cooking, mix in the shrimp, Parmesan, and chives. Mix by stirring. Add a tomato and cucumber salad on the side.
