Royal Roasted Chicken
A Royal Wedding is soon to occur! We have a Royal Roasted Chicken dish to start off our week-long celebration of Prince Harry and Meghan Markle being married. It will make you feel like you were there for the big event. This dish for roasted chicken is simple and tasty. It is certain to be a fairytale come true for any princess and prince yearning for love because it is flavored with thyme and lemon.
Ingredients
- 1 (4- to 5-pound) whole chicken
- 20 sprigs fresh thyme, divided
- 1 lemon, cut in half
- 3 cloves garlic, sliced
- 1 stick butter, melted
- 1/2 teaspoon paprika
- 4 carrots, cut into 2-inch chunks
- 8 red potatoes, cut in half
- 1 onion, cut into 1/2-inch wedges
- 1 1/2 teaspoons salt
- 1/2 teaspoon black pepper
Preparation
- Set oven to 375 degrees Fahrenheit.
- Add 10 thyme, lemon, and garlic sprigs to the chicken's cavity. Tie the legs together with kitchen twine, then tuck the wing points under the breast to fasten. In a large roasting pan, put the chicken.
- Melted butter, salt, pepper, and paprika should all be combined well in a small bowl. Combine the carrots, potatoes, and onion in a large basin. Toss the veggies with the remaining 10 sprigs of thyme and half of the butter mixture.
- Apply the remaining butter mixture to the chicken's exterior. In the roasting pan, surround the chicken with the veggies.
- Roast for 1-1/2 hours, or until the veggies are soft and the chicken's juices run clear (internal temperature should be 165 degrees). Prior to cutting, let the chicken 10 minutes to rest. Place atop a plate with roasted veggies.
